A restaurant guided by two young guys has emerged as a new reality on the Tuscanian hills, in Colle Val d’ Elsa. Here tradition and creativity are combined. Il Frantoio is located in Palazzo Giusti’s mill, one of the oldest buildings in the city as it was built in 1500, but it was only in 1800 that it was converted into a restaurant. Pietro is a young manager and Jacopo is the chef, a “very passionate and emotional person “as he defines himself. The chef looks at colors and his territory flavors as an inspiration to create new dishes and most importantly new emotions.
