A new project in the fine dining world. Located on Lungarno Cellini 69R, Saporium Firenze replaces La Bottega del Buon Caffè and reflects the new concept and philosophy of the Saporium restaurant opened last year in Borgo Santo Pietro in Chiusdino. Executive Chef Ariel Hagen and his brigade-along with the head gardener, garden team, cheesemaker, baker, fermenter, butcher, head of dining and sommelier-will take diners on a sensory journey based on Borgo Santo Pietro’s earthy-dish concept, created through produce from the estate and Chiusdino’s culinary gardens. A concept based on the principles of biodiversity, regenerative agriculture and the desire to share inventive cuisine while respecting the rhythm of nature and the authentic taste of the products of the earth.
