For the new restaurant at Belmond Villa San Michele, Allumeuse Studio developed the naming and storytelling from a precise intuition: not to describe a place, but a moment.

The project grew from a genuine immersion in the chef's work, in the rhythms of nature and the processes of the kitchen. From this observation, a key concept emerged: the value lies not in the ingredient itself, but in its moment of fullest expression.

From this, Antesi took shape — inspired by the term "anthesis," which describes the moment of flowering. A name that is both essential and evocative, one that suggests a time rather than defines a place.

The name becomes the guide for the entire project: it shapes the construction of the menu, the telling of the experience, and the positioning of the restaurant. Antesi interprets the Tuscan tradition without replicating it, transforming it into a contemporary gesture built on precision, seasonality, and attentiveness.
