For Oreade at Monteverdi Tuscany, Allumeuse worked as a strategic partner in the development of the gastronomic project, with the goal of building an identity capable of transcending the dimension of a restaurant and establishing itself as a coherent and contemporary cultural system.

The starting point was not the menu, but the territory. Not as an aesthetic or traditional reference, but as a complex landscape shaped by natural stratifications and human intervention. From this reading, Oreade takes form: a journey that moves through wild environments and cultivated spaces, drawing connections between memory, sustainability, and contemporary vision.

Allumeuse translated this intuition into a clear positioning, working closely with chef Riccardo Bacciottini to transform his sensibility and culinary journey into a recognisable philosophy. Not an execution, but an authorial voice — one capable of engaging with its context without being confined by it.

The consultancy extended to the definition of the gastronomic offering: from the structure of the menu to its positioning within international fine dining. Elements such as plant-based cuisine, sustainability, and the ethical sourcing of ingredients become integral parts of the narrative, building coherence and relevance.

Within this system, alimorgia — the ancient practice of foraging wild edible plants — is reinterpreted as a living practice. Not a reference to the past, but a contemporary tool for reading the territory, enriching the experience and adding cultural depth to the project.

In parallel, Oreade takes shape as an experiential destination. The landscape enters the project: foraging, harvesting, truffle, and beekeeping become natural extensions of the kitchen, transforming the territory into an active participant in the experience.
