For the Tosca restaurant at Castello di Casole, Allumeuse Hub worked as a strategic partner in defining the positioning and building the narrative framework, with the goal of transforming the restaurant into a coherent system capable of expressing the territory in a contemporary way.
The project began with a reflection: territory is not an origin, but a language. Not something to be represented, but to be listened to and translated. The task was therefore not to construct a descriptive narrative, but to define a principle capable of guiding every decision.
FFrom this vision, Territori took shape — the gastronomic project conceived by chef Daniele Sera. Not a map, but a living system. An observatory in which seasonality, climate, natural rhythms, and relationships with producers become structure, and in which the kitchen follows — rather than interprets — what unfolds.
Allumeuse translated this intuition into a clear positioning: a cuisine that renounces imposition in favour of subtraction, allowing limits to define direction. Technique accompanies, it does not dominate. The territory leads, it is not narrated.
Alongside this first layer sits Impronte, a complementary narrative axis that introduces a more personal and inward dimension. Where Territori observes, Impronte reinterprets: experiences, memory, and influences interweave, expanding the story without losing its rootedness.
Within this system, the partnership with chef Norbert Niederkofler also takes form — an internationally recognised figure on the themes of sustainability and culinary responsibility. His involvement as the opening guest is not an addition, but a natural extension of the project's thinking, one that deepens both its authority and its coherence.
The work consolidates into a set of clear guiding principles: personality over perfection; depth over novelty. Not as declarations, but as operational criteria capable of orienting the project over time.
The result is a distinctive and coherent positioning in which every element — from the menu to the narrative, from collaborations to curatorial choices — contributes to building an identity that is solid, evolving, and unmistakably recognisable.
Tosca does not tell the story of the territory. It enacts it.
